Salmon & Caviar Blinis
What better way to enter the summer than with a glass of Doe Eyed Queen and these delicious appetisers!
Ingredients:
75g Creme Fraiche
3 Slices of Wholegrain Rye Bread
125g Smoked Salmon
1 Teaspoon of Salt
1 Avocado
1/2 Lime
50g Caviar

Preparation: 20 minutes
Directions:
Slice the smoked salmon lengthwise into one inch rolls.
To make the avocado mousse, pop your avocado in a food processor and add a pinch of salt. After a minute squeeze the lime juice into the mixture and leave it to continue to blend for around two minutes until it has a silky texture.
Next, cut your rye bread into small squares and place each of the squares on a serving plate and carefully distribute the crème fraîche and avocado mousse in small circles onto each toast. Then place a roll of the smoked salmon next to the avocado and crème fraîche.
Lastly, spoon the caviar on top of the smoked salmon and serve with a glass of Doe Eyed Queen Sparkling Wine.
